There are plenty of sensors that combine with your phone for data collection and tracking. Most of them are based on an open source platform though. If you are serious about development, you will want to invest in open source projects. Here are Bluetooth compatible tags and sensors for location and health tracking:
findMe Tag & Hub: an open source platform for Bluetooth 6 tracking. It has a 6 DoF IMU and various other sensors, including pressure, temperature, and humidity sensor. Its hub capture directional and movement data from the tag.
VitalTrack PPG&Motion: a research grade biosignal and motion tracker that can be used in wearable form factors. It gives you raw PPG and motion data. It doesn’t consume too much power, making it ideal for wearables.
HealthyPi 5: an open source health tracking platform powered by the Pi RP2040. It can be used with external sensors to analyze GSR, EEG, and EMG data. It has WiFi and Bluetooth connectivity. You can program it in C and Python.
